I don't know if you can do the "Target" thing with the Read More as it's not a "standard" hyperlink
Normally you'd use the 'target' attribute to choose where a link will open a page e.g. a new tab, a new window, with or without the browser's toolbars and so forth.

So I don't think it's possible at least not with the native "read more" feature. I can't find any extensions to achieve this either.
I did find a few *old* topics on the same subject such as this one: viewtopic.php?t=973582
(I just googled: "Read More new window Joomla".)
